These muffins are a nice break from the sweet flavors we are used to. Because they have cheese, meat and savory herbs, they make a great breakfast muffin. Make them ahead and freeze for something quick on those mornings when you are running late.

Cook Time: 20 minutes
Total Time: 35 minutes
Yield: 12 regular or 24 mini muffins
Ingredients:
- 1 3/4 cup flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup fresh chopped herbs - your choice, basil, oregano or marjoram, sage or chives all work well
- 1/4 cup shredded sharp cheese
- 1 Tbsp brown sugar
- 1/3 cup cooked bacon
- 1 cup milk
- 1/2 stick of butter
Preparation:
Preheat oven to 400 degrees
Line 12 muffins
Mix flour, baking powder and salt. Stir in herbs, cheese, sugar and bacon.
Make well in the center.
In another bowl, combine egg, milk and melted butter.
Add wet ingredients to dry and mix gently. Mixture should be lumpy but moistened.
Spoon into prepared muffin tins. Fill them about 2/3 full.
Bake 15 to 20 minutes.
