This light and tasty salad is fantastic for sandwiches, and make a wonderful main dish when placed on top of a fresh summer salad.

Ingredients:
- 12.5 can chicken breast, or the equivalent of cooked, leftover chicken
- 3 Tbsp Mayo
- 4-6 fresh basil leaves, julienned
- 1 stalk celery, finely chopped
- 1/2 medium green apple, chopped
- Salt and pepper to taste
- onion powder if desired
Preparation:
Drain chicken breast
In medium bowl, break chicken into even, bite sized pieces
Add vegetables and seasonings
Mix in mayonnaise
Snip in fresh basil leaves and mix until evenly combined
