Sometimes, a month is too long to wait for an herbal vinegar to steep. Here is how to do it in a week or less.

Time Required: 10 minutes to heat and 1 week to steep
Here's How:
- Heat white vinegar to just below boiling temperature.
- Place your choice of herbs into clean, sterilized glass jar. A mason jar works well here.
- Pour hot vinegar over herbs. Cover them completely. Cap tightly.
- Gently shake vinegar twice a day for 4 to 7 days.
- Strain vinegar.
- Fill fancy, sterilized glass jars with herbal vinegar.
- Add attractive sprig of herb to bottle before capping.
Tips:
- Add hot pepper for a spicy herbal blend.
- Add a whole hot pepper to final product. If you can handle the heat, the hot pepper can also be eaten after 1 month.
- Keep vinegars out of direct sunlight to preserve the lovely colors. Faded vinegars still taste great!
