How To Make Herbal Vinegar - The Fast Method

By Amy Jeanroy, About.com

Sometimes, a month is too long to wait for an herbal vinegar to steep. Here is how to do it in a week or less.
Difficulty: Easy
Time Required: 10 minutes to heat and 1 week to steep
Here's How:
  1. Heat white vinegar to just below boiling temperature.

  2. Place your choice of herbs into clean, sterilized glass jar. A mason jar works well here.

  3. Pour hot vinegar over herbs. Cover them completely. Cap tightly.

  4. Gently shake vinegar twice a day for 4 to 7 days.

  5. Strain vinegar.

  6. Fill fancy, sterilized glass jars with herbal vinegar.

  7. Add attractive sprig of herb to bottle before capping.
Tips:
  1. Add hot pepper for a spicy herbal blend.
  2. Add a whole hot pepper to final product. If you can handle the heat, the hot pepper can also be eaten after 1 month.
  3. Keep vinegars out of direct sunlight to preserve the lovely colors. Faded vinegars still taste great!
  4. Use these vinegars to make your own oil and vinegar dressings.
What You Need:
  • White vinegar
  • Sauce pan to heat vinegar
  • Your choice of herbs
  • Glass mason jars for steeping
  • Decorative glass jars for gift giving
  • Additional herbs to decorate final product
