How To Saute Dandelion Greens

Dandelion greens are a tasty springtime treat. They are considered a potherb, which means they are the greens parts of a plant that are eaten. High in vitamin C and iron, dandelion greens are good for you as well as good tasting.
Difficulty: Easy
Time Required: 20 minutes
Here's How:
  1. Pick dandelion greens that have just emerged from the ground. You will need about one cup per person.

  2. Fry bacon or salt pork to release the fat.

  3. Add dandelion greens to fat, remove from heat and cover tightly.

  4. Let greens sit for 3 minutes to steam.

  5. Serve with Balsamic vinegar
Tips:
  1. Only pick from unsprayed lawns and areas away from traffic.
  2. Avoid stems as they are particularly bitter.
  3. Steam only enough to wilt the greens.
What You Need:
  • Dandelion greens
  • 1 slice of bacon or salt pork
  • Balsamic vinegar
