Steeping herbs in vinegar is a wonderfully easy way to make flavorful dressings and gifts for fine food loving friends. Here is a way to use even the blossoms of chives, to make a brilliant pink vinegar.
Difficulty: Easy
Time Required: 15 minutes - plus time to develop flavor

Here's How:

  1. Pick chives when they are fully opened
  2. Place blossoms in clean glass container.
  3. Cover with white vinegar.
  4. Cover jar tightly.
  5. Let stand at least 48 hours, or until blossoms fade and vinegar becomes bright pink.
  6. Strain when ready to use.

Tips:

  1. Keep this vinegar in complete darkness or the color will fade in a few hours. The taste remains, but it will once again be clear.
  2. Place plastic between the lid and the jar to keep the lid from corroding due to the acidity in the vinegar.

What You Need

  • 1 quart canning jar with lid
  • At least 2 cups of chive blossoms
  • White vinegar to fill jar
  • Tight fitting lid
  • plastic wrap
