Steeping herbs in vinegar is a wonderfully easy way to make flavorful dressings and gifts for fine food loving friends. Here is a way to use even the blossoms of chives, to make a brilliant pink vinegar.

Time Required: 15 minutes - plus time to develop flavor
Here's How:
- Pick chives when they are fully opened
- Place blossoms in clean glass container.
- Cover with white vinegar.
- Cover jar tightly.
- Let stand at least 48 hours, or until blossoms fade and vinegar becomes bright pink.
- Strain when ready to use.
Tips:
- Keep this vinegar in complete darkness or the color will fade in a few hours. The taste remains, but it will once again be clear.
- Place plastic between the lid and the jar to keep the lid from corroding due to the acidity in the vinegar.
What You Need
- 1 quart canning jar with lid
- At least 2 cups of chive blossoms
- White vinegar to fill jar
- Tight fitting lid
