For that amazing, melt in your mouth flavor of store bought rotisserie chicken, rub this mixture over your bird the night before. Wrap and refrigerate for 24 hours before roasting.

- 1 3 to 4 pound chicken
- 1 teaspoon salt
- 2 teaspoons paprika
- 1 tsp garlic powder
- 1 tsp thyme-ground to a powder 1 teaspoon black pepper
Mix all herbs and spices in a mortar and pestle (use a plastic bag and rolling pin as a substitute).
Rub mixture on all sides of chicken, being sure to use all and getting it into every surface of the meat.
Wrap meat tightly, and place in fridge overnight or at least 4 hours before cooking.
Roast until juices run clear, and internal temperature is 175 degrees Fahrenheit.
